In search of

Gluten free zucchini bread recipes. I'm desperate! Please leave me links or recipes in the comments. (Note: Sadly, no bananas or pineapple for me.)

In past years, I always had a freezer full of (glutenized) zucchini breads. I need to make the switch.

In Indiana, if you walk up to a friend's house carrying a basket of zucchini they will lock their doors and pretend they're not home. Zucchini bread, however, is always welcome.

1/4 cup veg. oil
2/3 cup brown or maple sugar ( or 1/3 c. honey. add 1/8 tsp baking soda)
2 large eggs
1 tsp. vanilla
1/2 cup drained applesauce
1 c. brown rice flour
1/2 c. potato starch
1/4 c. tapioca flour
2 tsp baking powder
1 tsp xanthan gum
1/2 tsp salt
1 1/2 tsp cinnamon
1 1/2 cups finely grated zucchini(about 3 small zucchini)
1/2 c. chopped pecans
1/4 c. raisins (omit if sensitive to yeast or mold)

1. Preheat oven to 350. grease 9x5 pan
2.cream oil & sugar with electric
mixer
3.add vanilla & applesauce, beat until smooth
4. add flours, BP, XG, salt & cinnamon
5. mix until combined
6. stir in remaining ingrediants.
batter will be thick.
bake for 1 hour

I hope you like it. I'm going to make it today. I haven't made it since last summer.

I had similar situations as you where several people, out of the blue would bring up Celiac disease. I took awhile for me to get it though, but your right we should listen to our bodies. I am much better than I was in the past but still not 100% like I would like to be. I keep telling myself I need to keep a food diary. I have a feeling there are other foods that trigger reactions. I'll have to work on that.

I have to limit myself to one or two zucchini or yellow squash plants a year to avoid overload. Your tomatoes look great, Kay!

I meant to tell you.....I don't drain the applesauce in my zucchini bread recipe but I suppose you could if you wanted to.

I use the Zuchinni Bread recipe out of "Gluten-Free Quick and Easy" by Carol Fenster, and it is yummy.
